WHAT IT IS: all natural dried puya chilies
- often thought of as a substitute for guajillio chillies – smaller and a little hotter
- this chili makes perfect ground flakes for pastas, pizza toppings, meats, bean dishes
- vacuum packed – quality chilies are most often not pre-ground but whole - maintaining their essential aroma and oils
- harvested from small farms in central Mexico, authentic, picked with pride and dried with care
HOW DOES IT TASTE: similar to guajillio but sharper, hotter - tangy, fruity (cherries, berries)
prepare it: a little more work than sprinkling generic ground chilies, but for a discerning chef, essential
- wash, rehydrate and toast lightly in a saucepan. over cooking can add bitterness. chop in small pieces or blend to flakes
USE IT: cook in moles and sauces, in chili – stews, in crock pot & insta-pot recipes.
