PREPARE IT: a little more work than sprinkling generic ground chilies, but for a discerning chef, essential
- wash, rehydrate and toast lightly in a saucepan. over cooking can add bitterness. chop in small pieces or blend to flakes
USE IT: cook in moles and sauces, in chili – stews, in crock pot & insta-pot recipes.
